Descriptions : Tempoyak is fermented durian.
It's a traditional condiment popular on the eastern side of the
Malaysian peninsula as well as on the island of Borneo. It was developed
both as a way to use overripe or excess durian, and to preserve the
fruit through the months after durian season. It's commonly mixed with
chiles into a spicy sauce called sambal, or served in a curry over fish
and vegetables.
